Bio

Raoni was born in São Sebastião, a coastal town near São Paulo, Brazil, where he grew up watching his father cook traditional dishes with the freshest fish. These early experiences ignited his passion for gastronomy and led him to pursue studies at one of Brazil's top culinary schools.

Graduating in 2005 at the age of 20, he then moved to Australia to seek opportunities that would help him grow as both a person and a chef. His first Head Chef position came five years later, at Romanos Restaurant on Hamilton Island in the Great Barrier Reef.

Since then, Raoni has worked in several award-winning restaurants across Australia, New Zealand and Norway, elevating his culinary skills and expanding his international experience.

In 2014, he joined his first motor yacht, the 125m Maryah, as Head Chef. Over the years, he has served on numerous other vessels of various sizes, managing unique culinary expectations and demands.

These experiences have allowed him to develop a strong understanding of the yachting industry, involving on-board living, management, and strategic provisioning on both small and large scales. They have also given him the confidence to handle the challenges that come with short-notice requests.

As a typical Brazilian, Raoni is a social individual who enjoys a good laugh and connecting with his team. He believes that a proactive attitude and a collaborative approach among the crew are key to achieving a successful yachting operation.

A passionate chef, his cooking focuses on sourcing the finest ingredients and enhancing their natural flavors through classic and modern techniques. His culinary expertise includes Italian, French, Asian fusion, and South American cuisines, enriched by his extensive travels and international experiences.
